you could always chop it yourself?? add some kick out on either side to get the capacity back..... have a look at some of the designs for chevys and fords and mock it up in cornflake packets, then cut it out of 16g steel and weld it up ??

Dont think its worth cutting much out of the sump because the gearbox bell housing is nearly as low.

Can't the engine be shimmed up on the mounts to give the required clearance?

Yes, you're right, but you can still take about 3/4" off the sump before it becomes level with the bell housing. The extra 3/4" is quite useful when you are only running 3" to start with.

I did this on my kit car, and it was quite straightforward. I didn't extend the sides to regain the capacity, but since I've added an oil cooler plus the 2m of piping that goes with it, my oil capacity is about the same as before. Shortening the oil pickup is a bit of a fiddle, but not too bad really.

May be the safer option to weld a piece of 1/4" plate to the sumpwith a raised skid to the front, at least you will take a few weeks to grind the bottom off the sump off on speed bumps.
On a more serious note, 3" of ground clearence is going to be close with your scrub height if you ever have a puncture, If your tire wall height is anything more than 3" and you have a puncture, your sump will drag along the ground, which could cause instability.
