Classic v8 3.5

Hi all,
First post …..

As above, I have a 3.5 ( edelbrock carb) in my NG TF , kit car.

Recently the temperature gauge, ( capillary ) has started swinging erratically.

All good until circa 180 f ( 82 c) when thermostat opens and electric fan kicks in, then gauge rises very quickly to about 212 f ( 100c) before dropping just as rapidly to 180 then up to 200, 190 , 212 etc…..

I have had the radiator flushed , thermostat and water pump replaced , but still the same.

IF thermometer positioned on the sensor housing shows the gauge to be roughly accurate.

Any help very much appreciated.

Any recommendations for V8 specialists in the NW ?

So it's an entirely mechanical gauge ? no electric involved at all ?

Is the probe anywhere that might see air locks or something ?

Yes, purely mechanical- after flushing at least twice would you expect airlocks and would that give the gauge fluctuations ?

Where is the probe located ?

After the stat ? ie so it might see fluctuations in temp as it opens ?

Although I guess if it's a new "problem", the probe has never moved ?
