What's involved in changing an electronic speedo drive to a cable speedo drive on an LT77 'box. Is it too much to hope that it's just a straight swap?.....

Obviously you need the cable, drive gear, and all the bits associated with the bearing and retaining clips as shown on the exploded diagram.

I can confirm 100% that it's a straight swap - you'll need all the bits in the Rimmers pictures - even the clamp is different.
I doubt very much if you'll get away without having to recalibrate you speedo though as the available gears only vchange the cable speed by a few % - you might be lucky though.
