Mk3 (facelift) and 4 cortina rev counters are adjustable, theres a pot inside. Maybe you could use a cortina rev counter?

Mk5 cortina rev counters are not adjustable, they did away with the pot and just put a resistor in, spose you could put a pot in if you cant get hold of a mk3 or 4 one.

100 degrees will be ok but a bit on the hot side, 110+ and you're overheating, mine runs at around 90-95 and I'm using a discovery Td5 radiator

Mine runs at around 90 degrees, my fan is on a switch, I just turn it on when crawling in traffic and off when moving again.

For an auto fan, I'd set it to come on at 95-100 degrees, unless anyone out there knows different.

I've gone back to .86 19 31 It was running ok with .83 18 28 but the engine was getting a lot hotter than usual and there was a very slight flat spot on acceleration, that could have been cured by putting the accelerator pump back on the middle hole but I wasn't keen on the high ...

I doubt a cat would last long if you kept the su's as the fuelling isn't accurate enough. If I was doing this then I'd fit an efi engine from a late range rover or discovery. May be the carb is too big for your application, even a 390cfm is probably too big for a 3.5 unless you are using above 6000rpm. You may be having fuel atomisation problems associated low air speed thru the carb, then, oh its not responding, and pumping more fuel in with the accellerator pump tryin...
