what would be a better choice over a pair (2) weber 48mm's or a weber 500.
i used to run side draughts and i want that sound again but i don't know what kind of diffrence i will get with performance.

If you have to use a carb use the 4 barrel, it is getting more difficult to find the bits for webbers, the manifold will be an "adapted" 4 barrel one. Webers are best used one to a pot and can be tricky to get to work off idle as the air velocity is very low, the 4 barrel gets around this by opening 2 chokes first then the other two.
Best regards

I used to run 45s years ago not on a V8 though and was constantly tweaking them to maintain their performance.
The linkages can also be a pain especially if you have to use a twin cable set up.
I would go with the four barrel as there is only one gasket in the whole carb, its simple to set up and your mpg should be better as you will only be using two chokes most of the time.Looks and sound wise the twin carb set up is always impressive but do you really want constant induction roar when you already have a musical intrument in your exhausts.
Also the four barrel is a cheaper option overall.
