What’s the best way to build in an automatic electric fuel pump shut off switch (in the event of an accident) for a carb fed motor – use the oil pressure switch, or a pulse wire from the coil negative to fuel pump relay, or an inertia switch mounted on the firewall which a lot of efi cars seem to have?

I'd go for inertia. It's also the simplest.
